A vegan Pizzoccheri example
Pizzoccheri is one of the typical dishes here in the mountains of Lake Como, however usually it has a lot of butter and cheese in it, it's normally vegetarian. It's very easy to veganize it though, I make it from time to time here at home on cold days as it's very comforting! I just replace the butter with vegan Megarine (from organic supermarket Natura Si in Como) and of course you can add a vegan cheese if you like, I like it without, feels fresh, so I just pimp it up with other things :D Also my husband doesn't like cabbage so I switch that to spinach instead. Otherwise all traditional ingredients Pizzoccheri della Valtellina (buckwheat) pasta, potatoes, garlic, sage, salt & pepper... On this day I added capers, basil and some sprinkles of spirulina :) YUM! :D
The Pizzoccheri della Valtellina pasta can usually be found in almost any basic supermarket here in and around Lake Como (and beyond) <3 Buon appetito!
