Happy vegan Saffron Risotto with plant friends

Love Saffron, Love asparagus! So easy breezy to make a vegan saffron risotto with asparagus and capers with lovely fresh greens, and sprinkles of hemp seeds on top. People ask if I put vegan cheese in the risotto, but I don't (cool if you do though) I think risotto rice becomes already fluffy and sticky by just adding vegan broth to it :D On the side this delightful pink tasty fermented purple cabbage & ginger Sauerkraut by Orto Fermentato Biologico bought from Natura Si supermarket in Como. Pretty standard, but if anyone's interested in ingredients for the risotto:
One bunch fresh asparagus chopped
Clove of garlic, grated
White wine
Small piece of Megarine ( brand Vitaquell from Natura Si supermarket)
Risotto rice
Vegan broth ( I use boiled water and bio brodo vegetale granulare but fab with peeps who make their own...one day I shall do this too... :D )
One packet bio Saffron
pinch of salt
We just fry the garlic and rice in the megarine for a few minutes, then add some white wine, simmer for a few mins, then add the vegan broth bit by bit as much as needed and the asparagus. In the end we add the saffron in a little water. So just let it boil until rice and all is ready and done and then add toppings like capers and hemp seeds and side things like greens and sauerkraut!
