I'm out travelling at the moment, but I thought I would collect a few of my favourite vegan dishes from the years here by the lake! Hope you're having a wonderful world vegan day and start to this November, world vegan month. It's pretty magical that this holiday is on this day where many are celebrating or remembering or giving space to otherworldlyness or in any other way this day may be sacred to them. Very interesting! Anyhoo, all the best wishes and hopefully enjoy some enchanted yummy vegan food today wherever you are <3 May all animals be happy & free. You can usually find chanterelles (funghi finferli in italian) in the Esselunga supermarket in Como around the August/September period. I usually just fry them up in some olive oil or vegan megarine (from the Natura Si supermarket in Como) and eat them with potatoes, bread, grains, polenta or vegan pasta like here...easy peasy :)
